I broke these out for the first time last night. I followed a recipe on the back of Bob's Red Mill 100% semolina pasta. I used the flat beater attachment on the mixer itself. There are some good tips in the product insert about what the consistency of the dough should be prior to rolling. I advise that you take the time to read this as I've heard some folks complain that the rollers and cutters can be difficult to clean. If the consistency of the dough is as it should be, the rollers will clean very easily with the included brush. FYI the proper dough consistency should be slightly stiff with elasticity and should not stick to your fingers when pinched.

Pasta rolled very easily. I ran each piece of dough through the rollers several times, folding over each time and moving through to the setting 3 on the roller. The cutter is awesome. Place your hand under the cutter as the finished pasta comes out and promptly move to the drying rack.

There is nothing quite like fresh pasta, and I'm very happy with this purchase. The attachments are easy to use and the entire process is very quick and easy.
